I also recommend these puzzle games for the iPhone:
Trism (Abit slower paced, but very unique take on iPhone’s capabilities)
Tatonic (The nearest to Lumines as we’ll ever get, but has its own flavour as the number of atoms required to join up before being removed increases over time. Absorbing stuff)
Enigmo (One of the first games and its a very interesting concept.)
Trace (Not strictly a puzzler, but interesting that you literally draw the solutions yourself!)

You forgot FLIP, I am addicted to that game. There are three modes but the puzzle mode is my fav.

Puzzle games are great for the iPhone because they are usually short and sweet, you cant get in depth like you can with a RPG because with an iPhone you usually just have a few minutes to play

The recent game that I’ve been playing is puzzle stax ( http://www.youtube.com/watch?v=0-1N1Y0N2Tk ). It really helps me pass the time on long subway rides

Don’t forget Block Drop! It’s an amazing puzzle game with beautiful 3D graphics and soothing music. Each level is randomly generated, so no two games will ever be the same.

“T-Kara” is another great puzzle game and very addictive if you ask me! =) It has two quite different modes.. I prefer the Score Attack mode! Graphics are also very nice!
