DiskWarrior. The single best application ever written for any platform. Keeps all my clients alive, and by extension it keeps me alive.

That'll teach me not to read the question properly!

I think I'm going to have to go for Photoshop CS3. As a designer I use the app daily, and without any of the other apps I thing I could get by with just Photoshop. I've also started using my camera a lot more recently, so I need something to process the photos in that has a little more power than iPhoto.

Wait.. Is the question what App, that doesn't come pre installed by Apple, can I not live without?

If so then my answer is simple, and I'm surprised that no one else has mentioned it.

Adobe Photoshop CS3.

Does no one else use the CS3 suite here? I surely can't live without it.

philbowell said Photoshop right above your post!

I considered saying Photoshop, but the new localized corrections in the Lightroom 2 Beta allow me to use Photoshop even less than before. I still use Photoshop for advanced editing, panoramas, and HDR's (with the Photomatix plugin), but Lightroom is a much more integral part of my workflow than PS.

Hmmm...this is a toughy...for me, it's between two:
World of Warcraft (w/ Expansion Pack)
or
Instant Handbrake to turn my DVDs into MP4s for my iPod and iPod Touch...
Hmmm...
Well I spend most of my time on WoW I guess...:/

I'd say...TextMate.

I'd really say Photoshop CS3 AND TextMate (since I really use them hand-in-hand. But that's not the rules.

With only one, it would have to be Photoshop CS3 for me too. I lot of apps I would have trouble doing without, but this is the only one that seems to truly have no equals for me personnally. And I can't think of any work-around with other embedded software to even come close to replacing its capabilities.

Which is truly sad, since it's such a poor app (suite) in every way except the insane number of features. I wish I could get my clients onto something else but there just isn't anything else out there.
