I'm wondering if anyone has any email-program recommendations for OS X (I'm using 10.3.9 at the moment). I've tried Entourage and Thunderbird so far - neither seemed quite right for me, though I'll probably stick with Thunderbird unless I happen to find something better.

I suggest you try Apple's Mail.app (it comes with your Mac). I find it to have all of the features that you liked in Thunderbird (I use that for Windows) but to include a much more 'mac-like' experience that I enjoy. I know that it works great for me!

I may try that - though, I don't think it's possible to run the latest version without Tiger. Since Leopard isn't that far away, I'll probably be waiting for that to upgrade.

Aside from a lot of the smart mailboxes, spotlight, and filter type features, the Panther version of mail isn't all that different from the current version. It will make it a heck of a lot easier to migrate all your messages to the leopard version of mail though. My suggestion would also be mail.app. As for other software (I've never tried it but there's still a dedicated following for each) there's Eudora it's now open source so the base version is free, but there is a paid upgrade for the advanced spam filters for $19.99. And the other alternative is Mailsmith but that's $99 USD. There's probably many others.

You might want to try Correo.

Correo is to Thunderbird as Camino is to Firefox.

It's open-source, based on Gecko, and plays nice with OS X. It' still very early in development.

I too vote Mail.app.

It does everything I need it to do, and if there is something I don't quite like there is usually a plugin that covers this!

What do you mean by functionality? I use my gmail account for Mail.app. The only thing that happens when using gmail by itself is that read/unread isn't synched.

There are some imap<->gmail scripts around, you could always try your luck with one of them. I know there's a CPAN (perl) module called GMail::IMAPD.
