BuyMyTronics is a good place to sell your iPhone if it is broken, eBay is the best place to sell a working one and the Apple Store is the best place to recycle it.

Whenever possible repurposing is better than recycling. Even if the thing you are no long needing is more damaging to the environment than a newer technology, it can often be very harmful and expensive to recycle. As such, repurposing or selling the device for reuse is often less damaging to the Earth over-all.

iPhones are perfect for resale on eBay, with their easy ability to be wiped back to a clean slate. And there is possibly no time like the present: Apple Store inventory dry and the new one not yet released. 8 GB iPhones are going generally from $300 to about $450 US right now. You might even move it faster if you unlock it (if you haven't already). The unlocked ones seem to be at the top of the sales.

If you sell it on eBay, you will get much more. A recycling company will give you $200-$250, whereas you can get $300 or more on eBay. If you unlock it, you can easily fetch the full price of $400 or even more.
